Should I structure the CV around projects or employers?

Employers as the frame, projects as the content. Under each role, list two or three named scheme types with value and your responsibility, since reviewers are matching your experience to a live tender. A chronological list without project detail forces them to guess and they usually guess low.

Do I need to state the design codes?

Yes, precisely, including the national annex where relevant. Eurocode 2 and Eurocode 7 experience is a hard requirement on most European schemes, and writing designed to relevant standards signals you may have worked only under supervision.

How much does chartered status matter?

For senior and signing roles it is often the deciding factor, and in Germany the Kammer entry determines what you may certify. Put the status and the chamber near the top, and if you are working towards it, give the expected date so a reviewer can plan around it.
